Sun Run nutrition: Baked turmeric squares

Turmeric has been gaining more attention since studies have shown its anti-inflammatory benefits. Although its bio-availability remains questionable, there is definitely no harm in including it in smoothies, stews or baked goods. These baked turmeric squares are a popular dessert in Middle Eastern countries, are easy to prepare, and make a great pre-training snack.

Ingredients:

1 cup all-purpose flour

1 cup semolina flour

1/2 cup canola oil

1 cup granulated sugar

1 cups cow’s milk (or almond milk)

5 tsp baking powder

5 tsp turmeric

5 tsp ground anise

1 tsp whole anise seeds

Sesame seeds, for topping.

Directions

Pre-heat oven to 350°F

In a mixing bowl, combine flour, semolina, spices and baking powder. Stir to combine.

In a separate bowl combine oil, milk and sugar and whisk until combined. Add to dry ingredients and mix with an electric mixer until you get a yellowish homogenous batter.

Pour batter into a 9-inch round baking dish and top with sesame seeds until surface of batter is covered.

Bake for 35 minutes until a tester in the middle of the pan comes out clean. Let cool completely, then cut into equal squares.
